Quick Dishes: Calabacitas
My husband has been been begging me to make this all winter long and finally, last week, I gave him his wish. I don't really understand why I waited so long. This recipe is SO easy to make and uses such simple ingredients. Not to mention it is low fat, low calorie, can I say HEALTHY and since my mom has just recently started Weight Watchers, probably a pretty low point per serving dish at that too!
Here's the low down on this all star dish. Layer in a dutch oven or similarly sized pot, chopped fresh onion, zucchini, yellow squash, tomato, minced garlic, pasilla pepper (mild flavor), cilantro, cumin, oregano, paprika, salt, pepper and a drizzle of olive oil OR dot with 4 TB butter and set over low heat to cook. Make sure to cover the pot though. This is crucial as you will begin to steam cook all vegetables allowing them to release their juices and combine flavors. Do not stir!
Wait about an hour until the vegetables are clearly cooked through and there is liquid dispersed before adding fresh or canned corn and 8oz of cheddar cheese (use reduced for lighter option). Stir together slowly allowing the cheese to melt into the vegetables and their liquid creating a broth. Taste and add more salt, pepper, cumin, oregano and paprika if needed then let the dish continue to cook at low heat for 10-15 minutes. Ladling into bowls and serving alongside some warm tortillas is my favorite go-to but for those needing more protein a grilled chicken breast or rotisserie chicken would be a great addition either on the side or shredded and thrown in with the calabacitas.
This is easily a peasant style dish but you will feel rich in your belly as well as your pocketbook after trying this simple dinner idea.
